Thursday (9/28): Spaghetti Squash Turkey Burrito Bowl with a Kale-Bacon Salad, Bacon Vinaigrette, and Homemade Cornbread
OK everyone: This is NOT one to miss! I would have to say this is the most raved about Katie's Plates dish! The spaghetti squash is roasted to loosen the "spaghetti" strands, and then stuffed with ground turkey, black beans, salsa, bell peppers, red onions, corn, cilantro, jalapeños, and topped with cheese! It's baked again to make it just irresistible. Served with a slice of freshly baked cornbread and a Bacon-Kale Salad with Sweet Bacon Dressing.
