This is such an innovative and exciting lunch being offered! Katie's family says it is their official favorite Katie's Plates meal! If you love antipasto, you'll crave this lunch. We make a homemade artichoke-lemon pesto, top it over grilled chicken and fresh yellow squash noodles, and serve it with a side of Olive Tapenade (recipe from NOLA Central Grocery!) We're also serving it with a paleo olive-thyme muffin! Wow - what a lunch!
