

This meal has had the most positive feedback in Katie's Plates history! It's a cheat meal made healthy! Instead of pasta, we use sweet potato rounds! Instead of regular cheese, we make a cashew cheese and sprinkle with dairy-free mozzarella! Served with a side spinach salad and homemade balsamic vinaigrette.
