This one holds the record for most-loved meal in Katie’s Plates history — and for good reason.
This sweet potato lasagna started as a “what if we tried this?” experiment and quickly turned into a full-blown fan favorite. Instead of pasta, we layer thinly sliced sweet potatoes with a rich, slow-simmered meat sauce, creamy cashew “cheese,” and just enough dairy-free mozzarella to give you that classic lasagna pull — without the heaviness.
It’s cozy, satisfying, and somehow still feels good to eat. Served with a fresh spinach and cherry tomato salad tossed in our homemade balsamic vinaigrette to balance all that comfort.
This is one of those meals people plan their week around — and yes, it’s labor-intensive, but we wouldn’t have it any other way.
