Tomato & Goat Cheese Tart (Gluten-Free) *Made Monday - 8/17*

This tart is one of those special seasonal recipes we wait all year to bring back. Buttery gluten-free crust, juicy roasted summer tomatoes, fresh herbs, creamy goat cheese… it tastes like something you’d order at a little café on vacation and immediately wish you could recreate at home.

The tomatoes roast down into sweet, rich perfection while the goat cheese turns creamy and tangy on top, with fresh basil, thyme, parsley, and marjoram baked into every bite. It’s light but satisfying, simple but somehow incredibly special.

Serve it warm for breakfast, lunch, or dinner with a crisp salad and a glass of wine, and suddenly an ordinary weekday feels a little bit like summer in the South of France.

We only make this tart when tomatoes are at their best — and once it’s gone for the season, it’s gone.
